Good reasons to make bbq ribs
These BBQ Ribs are perfect because they require very little active work while they cook. The slow roasting process breaks down the texture until the meat pulls away from the bone easily. Using a foil wrap keeps all the moisture inside so the ribs never get dry. It is a reliable way to get restaurant results at home with basic ingredients.
How to make bbq ribs
Prepare the meat: Preheat your oven to 150C. Remove the thin membrane from the back of the pork racks if it is still there. In a small bowl, mix the sugar, paprika, garlic powder, salt and pepper. Rub this mixture all over both sides of the ribs to coat them evenly.
Wrap and bake: Lay out two large pieces of aluminium foil. Place each rack on a piece of foil and wrap them up tightly so no steam can escape. Put the wrapped parcels on a baking tray. Bake in the oven for about two and a half hours until the meat is very tender.
Apply the sauce: Carefully open the foil parcels and pour away any excess fat. Brush a generous layer of barbecue sauce over the top of the ribs. Leave the foil open this time so the heat can reach the surface of the meat. Increase the oven temperature slightly to help the glaze set.
Finish and serve: Put the ribs back in the oven for another 20 to 30 minutes. The sauce should become thick, sticky and slightly charred in places. Take them out and let the meat rest for a few minutes before slicing between the bones. Serve the ribs warm with extra sauce on the side if you like.
Extra tips for bbq ribs
Removing the membrane from the back of the ribs is an important step for the best texture. You can use a butter knife to lift the edge and a piece of kitchen paper to grip and pull it off. If you prefer a smokier flavour, add a teaspoon of smoked paprika to your dry rub mixture. Make sure the foil is sealed well to prevent the BBQ Ribs from drying out during the long cook.
You can also finish these on a grill for a few minutes if you want a more traditional charred finish. Let the meat rest after cooking to keep the juices inside before you start cutting. This recipe for BBQ Ribs works best with baby back ribs but you can use spare ribs if you adjust the cooking time.
