Air Fryer Beef Steak

Air fryer beef steak gets a browned crust and a pink middle in about 8 minutes, with no spitting fat on the hob. Two sirloin or rump steaks, about 2.5cm thick, are rubbed with oil, salt, pepper and garlic powder, cooked at 200°C and turned halfway. A thermometer takes the guesswork out, and a short rest before slicing finishes the job.

Choosing and preparing the steak

Sirloin and rump suit the air fryer best, because they have enough fat to stay juicy and a thickness of about 2.5cm. A ribeye or fillet steak works too, with slight timing changes, and a very thin steak under 1.5cm needs only 4–5 minutes. Cook what fits in one layer: if your basket is small, do one steak at a time and keep the first warm, adding a couple of minutes to the total.

Do not skip patting the meat dry. Steak that goes in wet steams first and browns later, which gives a pale crust. Salt it just before cooking so it does not draw moisture to the surface.

Preparing air fryer beef steak

Tap a time to start a timer.

  1. Take the steaks out of the fridge Take the steaks out of the fridge before cooking so they lose the chill. Pat them dry all over with kitchen paper, as a dry surface browns better.
  2. Season Rub the oil over both sides of the steaks, then sprinkle on the salt, pepper and garlic powder. Press the seasoning in and cover the edges as well.
  3. Preheat Heat the air fryer to 200°C for .
  4. Cook Lay the steaks in the basket in a single layer, with space around them. Cook for , turn them with tongs and cook for more for medium-rare. Allow in total for rare and for medium.
  5. Check the temperature Push a thermometer into the centre of the thickest steak. 50°C is rare, 55°C medium-rare and 60°C medium. For well done, cook for in total until it reads 70°C or more.
  6. Rest Lift the steaks onto a warm plate and leave them for . The temperature rises by a few degrees and the juices settle, so the meat stays moist when you slice it.

What to serve with air fryer beef steak

Chips, a green salad, or grilled mushrooms and tomatoes are the usual partners. A spoonful of sauce is a good addition, such as steak with mushroom sauce. If you prefer a richer, fattier cut, follow the same method for air fryer ribeye steak.

Common problems and fixes for Air Fryer Beef Steak

The steak is overdone.
Air fryers vary, and thin steaks cook faster. Test at 6 minutes with a thermometer and take the steak out 3–4°C below your target, because it keeps cooking as it rests.
The outside is grey rather than browned.
The steaks were wet or the basket was crowded. Pat them very dry and leave a gap between the steaks so that the air can circulate.
The steak is chewy.
It was sliced straight away or with the grain. Rest it for the full 5 minutes, then slice across the grain.

Frequently asked questions about Air Fryer Beef Steak

How long do you cook beef steak in the air fryer?

For a 2.5cm steak at 200°C, allow 6–7 minutes for rare, 8 minutes for medium-rare, 10 minutes for medium and 12 minutes for well done, turning once halfway.

Can you cook steak from frozen?

It is better to defrost it first, in the fridge overnight. Frozen steak cooks unevenly, with a dry outside by the time the middle is ready.

Do you need to preheat the air fryer?

Yes, for 3 minutes. A hot basket sears the surface straight away, and the timings above assume it.

Is it safe to eat steak pink?

Yes, for a whole steak. Bacteria sit on the outside, which the hot air cooks. This does not apply to mince, burgers, rolled joints or sausages, which must be cooked until steaming hot with no pink.
