Why you should cook plank steak
Making a plank steak at home is much easier than people think. The combination of grilled meat and creamy piped potatoes creates a lovely texture. Using a plank helps keep the food hot while you eat. It is a perfect choice for a weekend dinner or a special occasion with friends.
How to cook plank steak
Prepare potatoes: Peel and boil the potatoes in a large pot until they are soft. Drain the water and mash them thoroughly with butter and egg yolks until the mixture is smooth. Season the mash with a little salt and pepper.
Sear steak: Heat a frying pan with oil over high heat. Season the beef steak with salt and pepper on both sides. Fry the meat quickly for a few minutes until it has a brown crust and then remove it from the pan.
Assemble plank: Place the seared meat in the centre of the oak plank. Use a piping bag to create small mounds of mashed potatoes all around the edges of the board. Place halved tomatoes and green beans in the gaps between the potatoes.
Grill food: Put the plank into a preheated oven at 220 degrees Celsius. Bake everything for about 15 minutes until the potatoes are golden brown. Serve the plank steak immediately while it is sizzling and hot.
Tips to make plank steak even better
Make sure your oak plank is oiled before use to prevent the wood from burning or cracking. If the plank is new, you should soak it in water for at least two hours before cooking. Using a floury potato variety will help you get the best consistency for the piped mash. Let the steak reach room temperature before you start searing it in the pan. This ensures the plank steak cooks evenly all the way through. You can also add a little bacon around the green beans for extra flavour.
