Why you should cook potato pie
This potato pie is incredibly versatile and budget friendly for any family. The combination of soft potatoes and melted cheese creates a delicious texture inside the pastry. It is a great way to use up extra potatoes you have in the kitchen. You only need a few minutes of preparation to get it ready for the oven.
Follow these 4 steps for potato pie
Prepare potatoes: Peel the potatoes and cut them into thin slices. Boil them in a pot of water for five minutes until they are slightly soft but still hold their shape. Drain the water and set the potatoes aside to cool for a moment.
Sauté onions: Peel and dice the onions into small pieces. Melt the butter in a pan and fry the onions until they are soft and translucent. Season the onions with salt and pepper to add flavour to the base.
Assemble pie: Roll out half of the pastry and line your pie dish. Layer the sliced potatoes, cooked onions and grated cheese inside the dish. Place the remaining pastry over the top and press the edges together to seal the potato pie.
Bake dish: Brush the top of the pastry with a beaten egg to help it turn golden. Place the dish in the oven at 200C and bake for forty minutes. Let it stand for a few minutes before serving so the filling sets properly.

Make sure you slice the potatoes evenly so they cook at the same rate. If you like a stronger flavour, you can add some mustard or herbs to the filling. Using a sharp cheese will give your potato pie a much better taste. Let the boiled potatoes cool down before adding them to the pastry to prevent it from getting soggy.
You can also add some leeks or bacon if you want a more substantial meal. Always seal the edges of the pastry tightly to keep the steam inside. If the crust browns too quickly, cover it loosely with a piece of foil while it finishes baking.
