Making French Toast is a great way to use up bread that is no longer fresh. The combination of milk and eggs creates a rich custard that softens the texture perfectly. It only takes a few minutes to cook in a hot pan until it becomes crispy on the edges. Most people have these basic ingredients in their kitchen already.

Prepare custard: Crack the eggs into a mixing bowl and whisk them together until the yolks and whites are combined. Pour in the milk and add the ground cinnamon then whisk again to distribute the spice evenly. Transfer this liquid into a shallow dish that is wide enough to hold a slice of bread.
Soak bread: Place a slice of bread into the egg mixture and let it sit for about thirty seconds. Flip the bread over so the other side can also absorb the liquid without making it too soggy. Repeat this process for each slice of bread until they are all coated.
Fry slices: Melt the butter in a large frying pan over a medium heat until it starts to bubble. Place the soaked bread into the pan and cook for three minutes on each side. The French Toast should be golden brown and slightly crisp when it is ready to turn.
Serve warm: Remove the cooked slices from the pan and place them onto serving plates. Drizzle a little maple syrup over the top while the bread is still hot from the pan. Add some fresh fruit if you want extra flavour and serve immediately.

Using thick bread like brioche or challah makes a much better French Toast than thin supermarket loaves. If your bread is very fresh you can lightly toast it in the oven for a few minutes to dry it out before soaking. This prevents the middle from becoming too mushy during the cooking process. Make sure the pan is not too hot or the butter will burn before the centre of the bread is cooked through.
You can keep the finished slices warm in a low oven if you are cooking for a larger group of people. Using whole milk instead of skimmed milk adds a much richer flavour to the final result.
