Why chocolate fondant is a favourite
This Chocolate Fondant recipe is incredibly quick to prepare and cook in the oven. The contrast between the firm outer cake and the liquid middle is always a crowd favourite. You can easily scale the quantities up if you are serving more people. It is a reliable way to enjoy a high quality chocolate experience at home.
Follow these 4 steps for chocolate fondant
Melt ingredients: Place the butter and dark chocolate into a heatproof bowl. Set the bowl over a pan of simmering water and stir until everything is smooth. Remove from the heat and let it cool slightly while you prepare the next step.
Whisk eggs: In another bowl, whisk the whole egg, egg yolk and sugar together until the mixture is pale and thick. Gently fold the melted chocolate mixture into the eggs. Be careful not to lose too much air while mixing.
Add flour: Sift the flour over the mixture and fold it in very gently. Grease two ramekins with butter and dust them with cocoa powder to prevent sticking. Pour the chocolate fondant batter evenly into the prepared moulds.
Bake: Bake the puddings in a preheated oven at 200C for exactly ten minutes. The sides should be firm but the top should still have a slight wobble. Leave them to stand for one minute before turning them out onto plates.

To get the best result for your chocolate fondant, ensure you use a good quality dark chocolate with at least 70 per cent cocoa solids. The timing is very important as every oven behaves differently so keep a close eye on them during the final minutes. You can prepare the batter in advance and keep it in the fridge until you are ready to bake. If you bake them straight from the fridge, you might need to add one or two extra minutes to the cooking time.
Always grease your moulds thoroughly with butter and a coating of cocoa powder to ensure they slide out easily. Serving these puddings with a scoop of cold vanilla ice cream or some fresh raspberries creates a lovely balance of flavours. This chocolate fondant should be served immediately while the centre is still warm and liquid.
