Air Fryer Lasagnette
Air fryer lasagnette gives you all the comfort of a lasagne bake without heating a full-size oven. Wide ribbon pasta is coated in a beef and tomato sauce enriched with a little double cream, then topped with mozzarella and baked in a small dish until bubbling and golden. This version serves two. Quantities are sized to fit a standard air fryer basket.

Ingredients and swaps for air fryer lasagnette
Lean beef mince keeps the sauce from becoming greasy. Turkey mince works too, as long as it is cooked until it is white all the way through. If you do not have double cream, a spoonful of mascarpone or crème fraîche gives a similar richness. Mature Cheddar can replace the mozzarella if you prefer a stronger flavour.
Boiling the pasta briefly first matters, because dry pasta will not soften in the small amount of sauce in the dish.
Air fryer lasagnette: the method
Tap a time to start a timer.
- Start the pasta Boil the lasagnette in well-salted water for less than the packet says (about ), so it stays firm. Drain and set aside.
- Make the sauce Heat the oil in a frying pan and cook the onion for until soft. Add the garlic and mince and fry for about , breaking up the lumps, until the meat is brown with no pink left. Stir in the tomato sauce and oregano, season with pepper and simmer for .
- Combine Stir the drained pasta and the cream into the sauce until coated, then spoon it into the dish and level the top.
- Cook covered Heat the air fryer to 180°C for . Cover the dish with foil, tucking it right round the edges so it cannot lift in the fan, and cook for .
- Add the cheese Remove the foil, scatter over the mozzarella and cook for more, until melted, bubbling and lightly golden. The mince should be steaming hot all the way through.
- Rest Lift the dish out with oven gloves and leave it to stand for before serving, so the sauce thickens slightly.
Serving and variations
A crisp green salad and a slice of garlic bread are all you need alongside. For an oven-baked family version, see lasagnette. If you would like to roll your own pasta, try homemade lasagnette.
Common problems and fixes for Air Fryer Lasagnette
- The pasta on top is dry and hard.
- The pasta must be covered by sauce. Press it down into the sauce, keep the foil on for the first 10 minutes and make sure the pasta was only boiled for part of its time.
- The sauce is thin and watery.
- Simmer it for 5 minutes in the pan until it coats the back of a spoon before mixing in the pasta. Pasta releases a little more liquid as it bakes.
- The cheese browns before the dish is hot.
- Add the cheese only for the last 5 minutes, and lower the temperature to 160°C if your air fryer runs hot.
Frequently asked questions about Air Fryer Lasagnette
What is lasagnette?
Lasagnette is a wide, ribbon-shaped pasta with ruffled edges, like a narrow lasagne sheet. If you cannot find it, use pappardelle or mafaldine, or break regular lasagne sheets into pieces.
Can you make it in the oven?
Yes. Cover with foil and bake at 200°C (180°C fan), gas 6, for 15 minutes. Remove the foil, add the cheese and bake for 10 minutes more, until bubbling.
Can you freeze it?
Yes, for up to 3 months. Cool it quickly, freeze in portions and defrost overnight in the fridge. Reheat until steaming hot all the way through.
Can you double the recipe?
Only if you have a large or dual-drawer air fryer. In a standard basket, cook two batches in separate dishes, as the basket needs space round the dish for the air to flow.
