Why you should make chickpea burgers
Making Chickpea Burgers at home is much cheaper than buying pre-made versions from the supermarket. You can control exactly what goes into them and adjust the seasoning to your liking. They are packed with plant based protein and provide a filling lunch or dinner. This recipe is very reliable and produces a firm patty that does not fall apart during cooking.
Step by step: chickpea burgers
Prepare base: Drain the chickpeas and rinse them under cold water. Pat them dry with kitchen paper to remove any excess moisture. Place the chickpeas into a food processor and pulse until they are broken down but still have some texture. Avoid over processing them into a smooth paste.
Mix ingredients: Transfer the pulsed chickpeas into a large mixing bowl. Add the chopped onion, garlic, cumin, coriander and parsley. Stir in the breadcrumbs and the beaten egg to help bind everything together. Season the mixture well with salt and pepper.
Shape patties: Divide the mixture into four equal portions. Use your hands to shape each portion into a round patty about two centimetres thick. Place the Chickpea Burgers on a plate and let them chill in the fridge for ten minutes if you have time. This helps them hold their shape better when frying.
Fry burgers: Heat the oil in a large frying pan over a medium heat. Carefully place the burgers into the hot pan. Cook for about five minutes on each side until they are golden brown and heated through. Serve the burgers immediately in buns with your favourite toppings.
Tips to make chickpea burgers even better
Make sure you dry the chickpeas thoroughly before pulsing them in the food processor. If there is too much liquid, the Chickpea Burgers might become too soft or mushy. You can swap the breadcrumbs for flour or oats if you prefer a different texture. If the mixture feels too dry, add a small splash of water or another egg to bind it.
These burgers can be cooked at 200 degrees for about twelve minutes. Simply spray them with a little oil and turn them halfway through. You can also freeze the raw patties for up to three months by wrapping them individually. Always defrost them completely before frying to ensure they cook evenly.
