Air Fryer Danish Sausage Rolls

Air fryer Danish sausage rolls wrap a whole hot dog sausage in crisp puff pastry, so there is no sausage meat to season and shape. Ready-rolled pastry is cut into eight rectangles, rolled round the sausages, glazed with egg and sesame seeds, and cooked in two batches of 12 minutes at 180°C. They suit lunchboxes, buffets and a quick afternoon snack, and the whole job takes about 45 minutes.

Making air fryer Danish sausage rolls ahead

You can shape the rolls up to 24 hours before cooking. Keep them covered on a tray in the fridge and brush with egg just before they go in the basket. To freeze them, wrap unglazed rolls in a single layer on a tray, freeze solid, then bag them for up to 1 month. Glaze them and cook from frozen at 180°C for 15–18 minutes, until deep golden and steaming hot in the middle.

Common problems and fixes for Air Fryer Danish Sausage Rolls

The pastry is flat and greasy rather than puffed.
It got too warm before cooking. If it softens while you shape the rolls, put them on a tray in the fridge for 10 minutes before they go into the basket.
The rolls come undone as they cook.
The seam was not sealed. Brush a little beaten egg along the edge to glue it down, and always place the roll seam-side down.
The tops are golden but the underneath is pale.
Air cannot reach the base. Use a perforated liner rather than a solid one, leave gaps between the rolls, and add 1–2 minutes if needed.

Frequently asked questions about Air Fryer Danish Sausage Rolls

How long do you cook sausage rolls in an air fryer?

12 minutes at 180°C for rolls made with pre-cooked sausages, in batches of four, plus 3 minutes to preheat. The pastry should be deep golden with no pale patches at the folds.

Can you use raw sausages?

Not straight away, as 12 minutes will not cook them. Fry the sausages for 12–15 minutes until cooked through, cool them for 10 minutes, then wrap and cook as in the recipe.

How are Danish sausage rolls different from British ones?

British sausage rolls wrap pastry round seasoned sausage meat, while these use a whole pre-cooked sausage. Danish bakeries also sell hot dog sausages wrapped in yeast dough, rather than puff pastry.

Can you use shop-bought pastry that is not all-butter?

Yes, any ready-rolled puff pastry works. All-butter gives a richer flavour and flakes a little more.
