Air Fryer Rump Cap Roast
Air fryer rump cap roast gives you a tender beef joint with a golden, rendered fat cap after about 25 minutes of cooking. An 800g piece feeds four, and the scored fat bastes the meat as it melts. Season it with just coarse salt and pepper, cook it fat side up at 180°C, then rest it for 15 minutes before slicing thinly across the grain. It is at its best pink in the middle.

Choosing the ingredients for air fryer rump cap roast
Look for a piece of about 800g with an even layer of white fat around 1cm thick, and ask your butcher to trim it to fit your basket if it is long. A 5-litre basket or larger holds it comfortably. Coarse sea salt clings to the fat and gives a better crust than fine table salt. If you can't find rump cap, a thick piece of rump or sirloin joint works, but it has less fat, so start checking the temperature after 20 minutes. Garlic powder, dried thyme or smoked paprika can go into the rub for a change.

- Bring to room temperature Take the beef out of the fridge before cooking. Pat it dry all over with kitchen paper, as a dry surface browns better.
- Score and season With a sharp knife, score the fat cap in a diamond pattern about 1cm apart, cutting through the fat but not into the meat. Rub the olive oil over the beef, then rub the salt and pepper into the fat, working it into the cuts.
- Preheat Heat the air fryer to 180°C for .
- Cook Place the beef in the basket with the fat side up. Cook at 180°C for for medium-rare, and check the middle with a meat thermometer. Take it out at 52–55°C for medium-rare or 57°C for medium, as the temperature rises by about 5°C while it rests. Add if it is not there yet.
- Rest Lift the beef on to a board with tongs, cover it loosely with foil and leave it for , so the juices settle through the meat.
- Slice Cut the beef across the grain into slices about 5mm thick, and pour over any juices from the board.

Common problems and fixes for Air Fryer Rump Cap Roast
- The outside is browned but the middle is still cold.
- Cold beef straight from the fridge cooks unevenly, so give it the full 30 minutes at room temperature. If the fat is dark before the middle is ready, cover the top loosely with foil and carry on cooking.
- The fat cap is pale and chewy.
- Pat the fat completely dry before oiling, score it through to the meat so it can render, and keep the fat side up for the whole cook.
- The slices are tough.
- Slice across the grain, not along it, and give the joint its full 15 minutes of resting. Cooking past 60°C also dries rump cap out.
- The air fryer smokes while the fat renders.
- Pour a tablespoon of water into the drawer below the basket before you start, so dripping fat does not burn.
Frequently asked questions about Air Fryer Rump Cap Roast
How long do you cook rump cap in the air fryer?
About 25 minutes at 180°C for an 800g piece, which gives medium-rare. Add 3–5 minutes for medium, and always check with a thermometer, because thickness matters more than weight.
What is rump cap?
It is the triangular cut from the top of the rump, with a thick layer of fat on one side. It is the cut Brazilians call picanha, and it is sold as rump cap or picanha at butchers and larger supermarkets.
Can I cook rump cap in the oven instead?
Yes. Roast an 800g piece at 200°C (180°C fan), gas 6, for 35–40 minutes for medium-rare, until the middle reaches 52–55°C, then rest it for 15 minutes.
Can I cook it from frozen?
No. Thaw it in the fridge overnight, then take it out 30 minutes before cooking. Beef that is still frozen in the middle cooks unevenly.
