Air Fryer Chilli Cheese Bites

Air fryer chilli cheese bites have a crisp panko coating and a hot, gooey Cheddar and jalapeño centre. Mature Cheddar is mixed with soft cheese so the filling holds its shape, then the balls are frozen and double-coated so the cheese stays inside. They cook in the basket in 8 minutes at 180°C, using far less oil than deep-frying, and make about 20 bites for four people.

Why air fryer chilli cheese bites work

Cheddar gives the flavour and the soft cheese holds it together, so the balls stay soft inside without running. The double coating of egg and panko is what keeps the filling in the bites as they heat. Freezing is the key step, because it lets the crumb set before the cheese melts.

Each batch fits about 10 bites in a standard 4–5 litre basket, leaving gaps for the air to circulate. If you try to fit all 20 in at once, they will steam and stick together.

Making air fryer chilli cheese bites

Tap a time to start a timer.

  1. Mix the filling Mix the Cheddar, soft cheese and jalapeños in a bowl until it forms a thick, sticky paste. With lightly floured hands, roll it into about 20 balls the size of a walnut (about 16g each) and put them on the lined tray.
  2. Freeze Freeze the balls for , until firm. This stops them melting out of the coating.
  3. Coat Put the flour in one bowl, the eggs in another and the panko mixed with the paprika in the third. Roll each ball in flour, then egg, then crumbs. Dip in the egg and crumbs a second time, then freeze for .
  4. Preheat Heat the air fryer to 180°C for . Spray the basket lightly with oil.
  5. Air fry Cook half the bites in a single layer with space between them for , shaking the basket after , until golden. Repeat with the second batch.
  6. Serve Leave the bites to stand for , because the centres are very hot. Serve with sweet chilli sauce or chilli mayo.

Dips and serving ideas

Sweet chilli sauce is the classic dip, and a homemade sweet chilli sauce or a spoonful of chilli mayo both go well. Serve the bites hot, as a party snack or with a green salad for a light meal.

Common problems and fixes for Air Fryer Chilli Cheese Bites

The cheese leaks out and the bites collapse in the basket.
The balls were not frozen long enough or the coating has gaps. Freeze for the full 30 minutes, double-coat and freeze again for 15 minutes before cooking.
The crumbs stay pale and patchy.
Spray the coated bites lightly with oil before they go in the basket and do not overcrowd it. Panko needs a little fat and space to brown.
The mixture is too soft to roll.
Chill the bowl for 15 minutes and flour your hands lightly. Make sure the jalapeños are drained well, because extra brine loosens the mix.

Frequently asked questions about Air Fryer Chilli Cheese Bites

Can you cook them in the oven?

Yes. Bake on a lined tray at 200°C (180°C fan), gas 6, for 12–15 minutes, turning halfway, until golden. They are slightly less crisp than in the air fryer.

Can you cook them from frozen?

Yes, and that is the best way. Open-freeze the coated bites, bag them and cook from frozen at 180°C for 9–10 minutes in the air fryer. Do not thaw them first.

Can you use mozzarella instead of soft cheese?

Grated mozzarella is too wet and stringy to hold a ball shape, so stick with Cheddar and soft cheese for the filling.

How do you make them less spicy?

Use fewer jalapeños, or swap them for finely chopped roasted red peppers from a jar. Leave out the smoked paprika if you prefer a milder crust.
